The Dunkin Donuts Shop at 908 S.Salisbury Blvd(410-749-5999) made this classic donut favorite!. There are several ways to judge the quality of a Bavarian Creme Donut which my youngest, Shelby calls a"pudding" donut.
The powdered sugar coating should be thick enough on the outside that with every bite you get a little rain shower of powdered sugar falling down your chin, to your plate, or even your pants leg. If you don't have to wipe your face after each bite, something is not right.
The yeast donut should be soft, light, and almost chewy. This is a sign of fresh dough that has been allowed to "raise" correctly. I always have a problem with this when I try to make my own. Hard to be patient and wait for the yeast to rise.
Finally, the creme filling should be just the right amount. You will get a little on your face with each bite, but not so much as to squirt the person sitting next to you. Talk about getting a pie in the face! If it is done right, when you bite into the filling you should feel just the hint of "coolness" on you tongue. Now that is a good classic donut!
Dunkin Donuts has been making this Bavarian Creme since day one, so they have it down pat! Remember, this if this donut has chocolate on top it is a Boston Creme(see Donut Day 7). But, the Boston Creme does not have the powered sugar, just chocolate on top. I would like to see the Bavarian/Boston Combo(powdered sugar & chocolate topping). Any donut shops listening?
